I have used 2x6 lumber remnants on the jack stands to spread the load  
positioned under the forward most unibody with the car as high as I could get  it. 
Height is your friend here.
The entire sub-frame will drop with only 8 bolts to remove.
Taking the motor out the bottom really isn't as bad as it first appears.
