Sun, light and water are the enemies of oil. It can last for years in cool, dry, dark storage. A painty smell means it's broken down. Interestingly, vegetable oil gets lighter and looks clearer in the beginning stages of degradation (it's the peroxides forming). I will use oil up to a year, but it rarely hits 70F here, and it's frozen for at least 6 months. Will in Alaska.
